Chicken with olives and lemon confit (Pollo con olive e limone)

This is a Moroccan-inspired chicken dish. To prepare it I use preserved lemons (Lemon confit) available at some specialty stores, they have a silken texture and strong lemon flavor which gives to this dish a very distinctive mediterranean taste. 
Ingredients
 (4 servings)
  • 1 Chicken
  • 1 Lemon confit 
  • 1 piece of fresh Ginger
  • 1 large cup of green olives
  • 3 medium onions
  • 2 Garlic cloves
  • 1 large cup of fresh parsley
  • 1 large cup of fresh coriander
  • 4 Tbs Extra Virgin Olive Oil  
  • 1/2 Tbs Turmeric powder
  • 1 Liter of hot water
  • Salt
  • Pepper
Instructions: In a food processor finely cut the 3 onions, the garlic and the ginger put aside, cut and mix parsley and coriander.
Put the oil in a large pan (better if you have a french "Cocotte") add the chopped onions, garlic and ginger, cook for 2 or 3 minutes.
Add the mixture of parsley and coriandel and let cook again for few minutes
Add the chicken and cook for 4 minutes, turn the meat minimum one time.
Add the olives , the lemon confit (in quarters), the turmeric powder, at the end add the hot water which should almost cover the chicken (see photo). Cover and bring to boil.  When boiling low the heat and let cook for 1 hour. After one hour take the chicken out of the pan. Put it on a baking tray and place it in the oven at 200°C for min. 15 minutes. In the meanwhile let the sauce boil down untill is thicker. When the chicken is ready take it out from the oven, place it in a large serving plate, cover with the sauce, the olives and lemon quarters. Serve warm. Buon Appetito!

Pizza with Porcini mushrooms (Pizza ai funghi porcini)

Probably one of my favourite Pizzas. Funghi Porcini are so tasteful...we do not need any other ingredient  to be added on this pizza...except mozzarella of course and if you like a taste of white trufle oil (olio al tartufo bianco). Croissants with apricot jam filling (cornetti alla marmellata di albicocche)

These croissants briochés with apricot jam filling are perfect for the traditional Italian breakfast: Cornetto e Cappuccino ! WOOOW I feel back in Italy already!
