Fish is good and light, everyone should eat fish at least 2 times a week, of course not fishsticks or fish and chips which are... another story.
Once a week I like to go to the fish market and get the offer of the day, in general here it's salmon or sea bream. This time I've got sea bream! Today's fish recipe it's really easy, simple, tasteful and light, a perfect dish if served with baked or boiled potatoes and a veggie of your choice. You'll need half of a large fish per person, this recipe is for two persons, in case you just double the ingredients.

Serves 2
Ingredients:
1 large Sea Bream
2 small organic lemons
few leaves of fresh sage
3 garlic cloves
2 tbs extra virgin olive oil
1/4 cup of dry white wine
Unrefined corse sea salt,  pepper
a small piece of butter (10gr), optional
Cut the lemon in half (lenghtwise) and slice it. Pour one tbs of olive oil in a small baking pan. Place the cleaned Sea Bream in the pan, fill it with a slice of lemon, a garlic clove, 2 leaves of sage, a little of corse salt and pepper. Place the lemon slices on the top of the bream as shown in the picture. Place the remaining garlic, sage and lemon around the fish and add 2-3 small pieces of butter.  Add salt and pepper on the top, place in the oven on 170°C for 20 to 25 minutes, depending on your oven. After The first 5 minutes open the oven and pour the wine over the fish.
Your fish is cooked when the skin (and lemon slices) gets little roasted (see the picture above)
Bone the fish and serve it with his cooking sauce and baked or boiled potatoes... Buon appetito!!

Neapolitan "Sfogliatella Frolla" (sfogliatella frolla napoletana)

The content and pictures of this post are copyright registered & protected ©myitaliancuisine I miss Italy tremendously... so today I will propose you something very traditional from Naple: the Sfogliatella! Neapolitan most famous pastry:"Sfogliatella"comes in two styles: "riccia", with a crust of many crisp, papery layers, and "frolla", with a thicker pastry crust. The riccia's tender exterior (made with flour, water, and lard) consists of concentric squashed rings. The frolla shell (made with flour, sugar, and butter or lard) is like the best sweet piecrust. Both hold fillings of sweetened ricotta and cooked semolina flavored with vanilla, "millefiori" flavour and mixed candied fruits. I propose you the Sfogliatella frolla, much easier to make at home....but terrific as well as the Riccia! The filling is, anyway, always the same. Makes about 20 Sfogliatelle Ingredients for the pastry crust: 500gr Pastry flour 180gr

Pastiera Napoletana, Neapolitan Easter Grain Pie

Prepared since centuries, in the region of Campania almost every family own his special Pastiera recipe. This  is my own Pstiera recipe: the crust is the one I use for crust pies in general, the traditional recipe uses lard I prefer to use butter, you can use what you like. The canned cooked grains are a must, you will normally find it in the italian grocery stores, as wel
