mini apple cakes - tortine di mela

Wooow this was quite a surprise! I wanted to make a cake ... but not too big... why not mini cakes? Single portion cakes are easy to store in the freeze, eventually, no need to cut portions...and they are so cute! They are beatiful and delicious, perfectly cooked, soft inside and crispy outside, good balance between apples and pastry.... a perfect little morning or afternoon treat! No butter and milk in this recipe, but olive oil (or any other vegetable oil) and soy heavy cream...I am sure everybody will like this recipe! Please try it and let me know ; )

 Makes 6-8 small cakes

Ingredients :
150gr AP flour (organic for me) but may be more or less depending on the flour you use...
50gr potato starch (or corn starch)
2 eggs (organic for me)
3/4 sachet baking powder
1 teaspoon vanilla extract
1/2 cup vegetable oil (organic extra virgin olive oil for me)
1/2 cup soy heavy cream (for cooking or whipping)
90gr sugar (max100 if you like it sweeter)
3 apples (peeled and sliced)
1 pinch of salt
decoration : icing sugar for dusting  or 1tbs apricot jam with 1tbs of hot water (mix and brush the cooled cakes with the mix)

Tools:
6 to 8 aluminium metal or disposable mini cakes forms
A food processor (optional)

Instructions:
- Preheat you oven on 180C°(356F°).
- Mix the dried ingredients: AP flour, potato (or corn) starch, baking powder in a bowl.
- Mix the eggs and the sugar in a food processor for a few minutes, add oil, soy cream, pinch of salt, keep on mixing. Add the vanilla extract and the mix flour/potato starch/baking powder. If you don't have a food processor: work all the ingredients in the given order with a beater.....the result is the same!
- Pour the mix in the small cakes forms, add the sliced apples on the top,  dip them in the dough, see here above...if you like you can sprinkle a little powdered cinnamon on the top of the cakes.
- Cook in the preheated oven for about 30- 35 minutes, check the cooking with a toothpick, pick the cakes in the middle with a toothpick, if it comes out dry... the cakes are ready!
Once ready, take the cakes out of the oven and allow to cool. Once cooled decorate with icing sugar  or brush the top with a mix of abpricot jam and hot water, they will be shiny and beautiful! Buon appetito a tutti!!

Croissants with apricot jam filling (cornetti alla marmellata di albicocche)

These croissants briochés with apricot jam filling are perfect for the traditional Italian breakfast: Cornetto e Cappuccino ! WOOOW I feel back in Italy already! Prepared since centuries, in the region of Campania almost every family own his special Pastiera recipe.
